RECIPE - Amour Au Chocolate

1) Hazelnut dacquoise base

150g egg white

50g sugar

135g hazelnut powder

150g icing sugar

35g hazelnut (roasted)

2) Crispy Praline

80g almond paste

80g hazelnut paste

16g chocolate couverture

12g unsalted butter

80g feuillentine

3) Milk Chocolate Chantilly

500g cream

340g chocolate

RECIPE - Chicken meatballs glazed with chocolate and tamarind sauce

1) Sauce

10 shallots (160g)

20 clove Garlic (60g)

2 tbsp assam (tamarind paste)

1 tbsp black pepper

4 tbsp coriander powder

1 cup water

3 tbsp sweet dark soya sauce

1 tbsp gula malacca

25g dark chocolate coverture

2) Chicken meatballs

2 tbsp toasted crushed coriander seed

500g minced chicken

2 tsp ground black pepper

1 whole chopped red onion

1 cup breadcrumbs

1 egg yolk Melting Heart Truffles

200g cream

1 vanilla bean

40g glucose

230g dark chocolate coverture

70g cold unsalted butter

300g tempered dark chocolate coverture

250g hot milk Brown Rice Crispy Crunch Truffles

80g Organic Brown Rice Cakes (4 pieces)

20g Chopped Roasted Almond

20g Chopped Cashew

20g Chopped Pistachios

1 tbsp of tiny sliced kaffir Lime leaves

50g turkey bacon

2 tbsp Honey

150-200g dark chocolate (180g)
