Recipe for Chicken “Bak Kwa” (鸡肉肉干)
1kg minced chicken thigh
2 tbsp. light soy sauce
½ tbsp. fish sauce
1 tbsp. oyster sauce
2 tbsp. dark soya sauce
1 tbsp. Chinese five spice powder
A dash of pepper
½ tsp salt
2 pieces fermented red bean curd (红腐乳)
40 ml Chinese rose wine (玫瑰露酒)
Combine all the marinade ingredients together and mix thoroughly with the minced chicken. Then leave in fridge to marinade for at least 4 hours or overnight if possible.
Spread marinated chicken evenly over a flat oven-proof tray and grill for 20 minutes in 160°C. Then remove the tray and pour away excess oil from the tray. Cut the meat into desired size and grill again for 30 minutes in 250°C.
