Our first Thinking Chef Episode by lifestyle chef Tinoq Russell Goh on healthy cooking and eating, featuring Red Snapper in Banana Leaf and Brown Rice.
Ingredients for baked red snapper in banana leaf:
Fish preparation
• Medium size red snapper whole fish
• 4-5 large banana leaves and toothpicks
• 5-6 cherry tomatoes
• 1 tsp black sweet sauce each side
• 1 tsp virgin coconut oil
• 2 calamansi and 1 lime Rempah (Marinade)
Dry ingredients
• 3 tsp coriander seeds
• 3 tsp white peppercorn seeds
• 4-6 candlenuts
• 2 tsp salt
Wet ingredients
• 3 cloves garlic
• 6 shallots
• 1 inch fresh turmeric
• 1 stalk lemongrass, white portion
